Greek Orthodox monk Father Epifanios lifts spaghetti out of a pot at the chapel of Mylopotamos, near the monastery of Great Lavra, at the Orthodox sanctuary on Mount Athos, Tuesday, March 18, 2008. Food cooked at the sanctuary _ billed as a strict form of the Mediterranean diet _ has enjoyed a wider appeal among Greeks who have become increasingly health conscious. Enjoy the following recipe inspired by Father Epifanios Milopotaminos’ Cooking on Mount Athos,

BRAISED COD WITH PLUMS

3 Tbsp. (45mL) olive oil

3 cloves garlic, minced

1 large yellow onion, diced

1 lb. (1/2 kg.) fresh plums, halved and pitted

1 1/2 lbs. 750g) fresh cod

1/2 tsp. (2mL) kosher salt

Juice of 1 lemon

2 Tbsp. (30mL) chopped fresh parsley

Ground black pepper, to taste

In a large, deep skillet over medium-high, combine olive oil, garlic and onion. Saute until onion just begins to soften, about three to four minutes.

Add plums and saute another two minutes. Arrange cod over onions and plums, then add enough water to come halfway up cod. Sprinkle cod with salt, then bring water to a simmer, cover and cook 15 minutes, or until the cod flakes easily.

Sprinkle lemon juice and parsley over cod, then season with pepper.

Serves 4 to 6.

A delicious meal ! I tried the recepie today and the combination with cod and plums worked out fine ! I had patotoes with the dish. Drink a Chardonay or even a slightly sweet wine, because of the tast of the plums. Do not eat the meal to warm, the plums get very hot ! Enjoy !

Here you can buy the Greek version of the book: http://www.perizitito.gr/product.php?productid=144472&page=2. But if you take some time: the book “Cooking on Mount Athos” soon will be published in English and Russian (see the Kelliotis-blog: http://agioritikesmnimes.pblogs.gr/2010/07/649718.html).
